But I&#8217;m not just talking about any pastas, I&#8217;m talking about <strong data-start=\"511\" data-end=\"518\">the<\/strong> pastas: the four queens of Roman cuisine\u2014<strong data-start=\"560\" data-end=\"613\">Carbonara, Cacio e Pepe, Amatriciana, and Gricia.<\/strong><\/p>\n<p>Every eatery in the Eternal City presents these four pasta dishes to their customers, and after weeks of excessive carb consumption, I have formed my personal opinions about them. The following review presents my informal ranking of Rome&#8217;s four traditional pasta dishes.<\/p>\n<h3 data-start=\"615\" data-end=\"885\"><strong data-start=\"899\" data-end=\"912\">Carbonara<\/strong><\/h3>\n<p>To begin, <strong data-start=\"924\" data-end=\"937\">Carbonara<\/strong> always stands out as the ultimate choice. Egg yolks serve as the dairy-free base for this dish, creating a salty and crispy flavor with peppery notes from the <strong data-start=\"1097\" data-end=\"1110\">guanciale<\/strong> (pork jowl). The egg emulsion perfectly coats the <strong data-start=\"1161\" data-end=\"1176\">spaghettoni<\/strong> or <strong data-start=\"1180\" data-end=\"1192\">rigatoni<\/strong>, which are the preferred pasta shapes for these four dishes.<\/p>\n<p>Out of the several Carbonara experiences I\u2019ve had, my favorite was at <strong data-start=\"1325\" data-end=\"1344\">Tonarello Scala<\/strong> in the Trastevere district, with its paper-covered tables and unlimited wine options. The servers delivered the dish with a flourish at the table, which made me even more excited to eat it. The deep flavors combined with the sharp notes from the <strong data-start=\"1591\" data-end=\"1603\">pecorino<\/strong> cheese made for an unbeatable experience.<\/p>\n<p>Carbonara firmly holds the top position in every Roman pasta hierarchy. The dish provides a rich yet authentic experience because it never tries too hard to impress. If you&#8217;re going to choose just one pasta dish during your visit to Rome, <strong data-start=\"1886\" data-end=\"1907\">make it Carbonara<\/strong>.<\/p>\n<h3 data-start=\"1647\" data-end=\"1908\"><strong data-start=\"1922\" data-end=\"1938\">Cacio e Pepe<\/strong><\/h3>\n<p><strong data-start=\"1940\" data-end=\"1956\">Cacio e Pepe<\/strong> is usually seen as the introverted member of the group. The dish consists of only three ingredients: black pepper, pasta, and <strong data-start=\"2083\" data-end=\"2102\">pecorino romano<\/strong>. That\u2019s it. It offers a minimal presentation with no meat or garnishes. People frequently underestimate this dish because of its simplicity\u2014yet preparing it perfectly remains extremely challenging. When done right, the sauce turns into a velvety, smooth experience.<\/p>\n<p>Cacio e Pepe delivers peaceful comfort without the showy flair of Carbonara. It satisfies those in need of cozy food after a long day walking through the heat. Some compare it to an Italian version of American mac and cheese\u2014but with a Roman twist.<\/p>\n<p>Cacio e Pepe takes second place due to its inevitable comparison with Carbonara. A perfect way to put it: my romantic relationship with Carbonara would be passionate, while my relationship with Cacio e Pepe would be a deep, lifelong commitment.<\/p>\n<h3 data-start=\"2620\" data-end=\"2864\"><strong data-start=\"2878\" data-end=\"2893\">Amatriciana<\/strong><\/h3>\n<p>For me, <strong data-start=\"2903\" data-end=\"2918\">Amatriciana<\/strong> is the most underrated of the four. It brings an energetic and bold presence. The preparation includes <strong data-start=\"3022\" data-end=\"3035\">guanciale<\/strong>, <strong data-start=\"3037\" data-end=\"3049\">tomatoes<\/strong>, <strong data-start=\"3051\" data-end=\"3068\">chili peppers<\/strong>, and <strong data-start=\"3074\" data-end=\"3086\">pecorino<\/strong> cheese. The dish unites the spiciness of tomato sauce with the richness of Carbonara.<\/p>\n<p>Its bold look and flavor profile made it my choice when I wanted to try something new. The balance between guanciale fat and tomato creates a deeply satisfying experience, while the chili peppers add just the right amount of heat.<\/p>\n<p>It ranks third for me because it feels slightly more casual than the others. Still, it stands out as the only one of the four that features tomatoes\u2014a key ingredient in Italian cuisine. Every pasta lover should give this one a try. Many actually prefer it over Carbonara.<\/p>\n<h3 data-start=\"3406\" data-end=\"3677\"><strong data-start=\"3691\" data-end=\"3701\">Gricia<\/strong><\/h3>\n<p>I find it a little sad that nobody really talks about <strong data-start=\"3757\" data-end=\"3767\">Gricia<\/strong>. This dish resembles Carbonara with its use of <strong data-start=\"3815\" data-end=\"3828\">guanciale<\/strong>, yet it lacks eggs. It also shares characteristics with Cacio e Pepe, but with pork added. Gricia contains only three main ingredients: <strong data-start=\"3965\" data-end=\"3989\">guanciale, pecorino,<\/strong> and <strong data-start=\"3994\" data-end=\"4010\">black pepper<\/strong>. It\u2019s excellent in its own right.<\/p>\n<p>When I first tasted it, I appreciated the flavor\u2014but I couldn\u2019t help feeling like it was missing something, such as egg or tomato. This member of the pasta family lives in the shadows without recognition.
